Helpful link on what you should or shouldn't eat
The above link was given to my husband by his doctor. I found it very helpful learning what foods were going to be good for him & what foods to avoid.
Day 2: I made Ground Turkey Burger Tacos. I used Homemade Taco Seasoning to avoid all the added Sodium in the store bought seasoning packets. I just omitted the salt all together. When you purchase Ground Turkey Burger you want to make sure it is LEAN. So far we have found it pretty pricey. We are going to attempt to grind our own in the very near future.
Day 2: I also made a batch of homemade Vegetable Stock to use when cooking to add flavor when cooking the rice & other dishes. Next time I will make it in smaller quantities.
The Tacos were a great make ahead meal for a day when I wasn't going to be home & everyone could just reheat themselves. Could also be used in a Burrito with leftover Rice Pilaf & No Salt Added Black Beans. Don't forget to add lots of veggies!!
Day 3: I made Baked Blackened Talapia. I used their recipe for the spices but I omitted Salt & didn't use the quantity of oils or cooking spray. I just lightly brushed the fish with olive oil. We did not make the tarter sauce, instead just a squeeze of fresh lemon. If you did choose to make your own tartar I suggest using This Mayo & go light on the relish (anything pickled has salt in it).
I also made Spanish Rice from Scratch.to go with the talapia: I used Brown Rice cooked in 2 quarts of home made veggie stock, 1 quart of homemade canned salsa from last years garden & 2 tsp of cumin.
I cooked up some yellow beans I had frozen from the garden. I cooked the beans with a little olive oil, minced garlic & ground black pepper.

My husband was recently diagnosed with a health issue that requires a low sodium & low fat diet. My goal is to create healthy, satisfying & flavorful meals that we can enjoy. I decided it might be a good idea to document the different meals & recipes since they are new to me. I also thought maybe someone else who is on this journey may find them helpful as well.
The first dish I prepared was Chicken Baked in Salsa over Brown Rice Pilaf. I used frozen chicken breasts & a jar of salsa I all ready had on hand. This was very yummy but I noticed the salt. I got out my package of chicken & realized that it had sodium & sugar in it. That was a lesson learned. I now check the packaging on everything. Next time I make this will be with Fresh chicken breasts nothing added. I will also use my own canned salsa or make fresh. The chicken can easily be cooked in a slow cooker. I also think this would taste yummy on whole grain tortilla shells.
